AN OOLONG TEA
OVERVIEW
The leaves are partially
oxidized to make oolong
tea. The fermentation
process is similar to
that of black tea,
however, the withering
and fermentation times
are not as long. Because
the fermentation process
is quicker, the result
is a tea that shares
both black and green
characteristics. Oolong
tea is the least widely
consumed, representing
only about 2% of
worldwide consumption.
Manufacture
Differences between
green, black, and oolong
teas occur during the
processing of the tea
leaves. Oolong tea
differs from the other
two types in that it is
only semi-fermented
(oxidized) tea. Green
tea is unfermented and
black tea is fermented
